Trim the fat from the chops and render it down in a dutch oven. Remove when crispy and discard. Add a small chopped onion to the drippings and sautee' until just soft. Salt & Pepper the chops. Brown chops in the onion on both sides. Turn down the heat. Drain 1 bag of Flanagan's Sauerkraut (without caraway seeds) and add over the chops. Cover and cook on low for 20 minutes (depending on how thick the chops are), turning once. YUM! (You can add in a small chopped apple to the kraut mix too)
