Just pulled it out, there is a sheen of bubbling butter on top. I may have been wrong because chess does crisp a little on the top and doing the butter that way may create the crispness. We shall see how it taste.

I pre-baked the crust 10 minutes. Pies that are cooked at very low temps can saturate a crust and make it like an over cooked dumpling. Check out the directions for the butter, have you ever been told to bind softened butter with wet ingredients like milk? No because it won't bind properly you always bind it with the sugar or melt the butter to a liquid form. I ended up with millions of tiny butter pearls which I hope does not ruin the consistency of my pie. I found a lemon chess that suggest you melt the butter.
