YUMMMMM....that sounds really good. I'll have to try it sometime.
I do the stewed squash like most everyone else. Cut up squash & onion, salt and pepper. Cook until tender. Add about 1/2 stick butter and cook the last 10-15 mins.
And, if you feel inclined you can drain the squash above, add grated cheese, one egg, 1-2 tbsp mayonnaise and crushed saltine crackers till consistency you want. Put in casserole dish and top with more cheese. Wa-La: squash casserole!!
