Anti-freeze in the oil doesn't eat the bearings... Anti-freeze is a corrosion inhibitor... it doesn't cause corrosion. Unless the truck is not worth a couple of hundred dollars, why wouldn't you replace the head gasket? They get weak and they fail, just like any other part on an automobile. Replace the engine is absolutely silly, if it is a blown head gasket. It's about a 6hr job to replace a head gasket on most vehicles... If you have it fixed, use a factory head gasket, not a parts store one. If/when the head is pulled, the head and block need to be inspected for cracks. Well first, 51 processes running isn't necessarily a bad thing. I have 53 processes running most of the time. The number of process you have running is irrelevant. The "processor usage" and "memory" is what counts. You need to CTRL-ALT-DEL or right click the task bar and choose "Task Manager" and look at the processes running. Look and see which one is using the "CPU" in high numbers. Also, look to see how much memory it uses. Down at the bottom of the Task Manager it will show total CPU usage.
