Finally caved and turned air back on this morning when it reached 81 inside! The humidity was AWFUL yesterday evening and last night! I was trying to hold out till the cool air came back in, but I shut the window and turned on the air this morning.

There is a spray cleaner that is provided by the store's licensed pest control company. Once a week the produce racks are supposed to be pulled, cleaned, and sprayed with this cleaner and left to air dry. If the store has a fresh individual donut case (very few do anymore) they are to pull the donut case nightly and clean. Then spray down with the special cleaner and allow to air dry. All drains are throughly scrubbed and cleaned nightly. There is an outside agency that comes in a audits the department cleaning and particularly looks at drains as they can also be a source for sa

Hope is works out for you! And remember: DO NOT RUSH THE ROUX!!! It WILL take a minute to get a good dark roux if that's what you want. I prefer a med brown roux. Prolly takes 15-20 mins (maybe even 30) to get the color I like. I just keep cooking it till it looks right! Tru Dat!

Google is your friend! The trick to getting a good brown roux is in how long you brown the flour and oil before you add the other ingredients. DO NOT rush this step. Slow and steady until you get the color you want. The longer you cook it, the darker your roux gets.
