I cut them up (wedges, cubes, thick slices - whatever you like) then toss them in finely minced garlic, lots of fresh ground black pepper, teaspoon to tablespoon of dried crushed rosemary and a good bit of olive oil. Bake them at 400 for about 15 minutes, stir (or flip) and cook til done. Or put into cold water, bring to boil and simmer until done. Drain and toss with dressing of your choice.

We actually did the rain forest while we were in San Juan, and did the dry forest while down in Guanica.
