I make a "spicy" grilled cheese which is really good.
Fiesta / southwestern soup mix (canned) & a full 2 cups of shredded cheese (usually sharp cheddar or a mixture of taco cheese without the spices mixed in). Spread on big slices of bread (like Italian loaf or such), coat outside with a bit of butter, and grill/pan fry. Very sloppy until set up a bit, but oh so yummy! Good on a single slice of bread and broiled too.
The leftover mixed filling freezes good for later
