I can't wait!

My mom had 5 children. When the last one got married and moved out of her house, she would think of ways to get us to come visit, so she wouldn't be so lonely. I haven't had to face that situation yet, but right now, I'm looking forward to it!

The proceeds from the Hobo supper and the event on April 14th go to our Relay For Life team, Cousins For A Cure! We will have Bluegrass Music, and we will be selling bar-b-q plates, as well as other food and drinks. Have you ever been to a Bluegrass Festival at Raccoon Creek Music Park? April 14 will be a full day of music, food, and fun. The entrance fee is only $5.00(normally it is $12.00, I believe). ALL money made will go to American Cancer Society. I only make 2 layers. I think Mrs. G made 3 layers. When you split the two layers with sewing thread(or dental floss) they are very thin, so it's not a big cake. Lots of people that don't like coconut cake, love this cake. I think it's because of the Cool Whip

I am so thrilled that my coconut cake recipe made it in a thread! Fresh would be even better! Lots of people use canned. That's why I stressed frozen. Canned isn't as good in my opinion.

I'm so glad you enjoyed it! It's a family favorite! Anytime we have a family gathering, you'll always find a coconut cake. Cousins For A Cure will have our next fundraiser April 14th at Raccoon Creek Music Park. No doubt we will have a few coconut cakes there as well!
