This is interesting...but given that success is based on the roux, it seems a small price to pay. But, I've also never had to stand over my roux for an hour. No more than 30 minutes, actually. Though, I don't make army size portions which wold likely require more stirring time. You have to add love to the roux, though, and that's why the stirring is so important.

I'm making my first batch of gumbo today. I'm tempted to try a butter roux. Since I'll be destroying the kitchen, I decided I'll make a batch of chili too and freeze it. I'm feeling that "it's time to prepare for winter" feeling. I'm also stocking up on the reds and retiring the whites for the season. Brought in a batch of wood too. What are you doing to prepare for the cool weather?

Bless your heart. You wouldn't have a lighting fixture or appliance in your house if you didn't have some tolerance. Home Depot, Target and Walmart have all been cited for poor working conditions, as did almost every small appliance and computer manufacturer. The chinese are a crazy population.
