My Dad always did a big turkey soup - save the carcass, bring in the veggies and simmer away for hours with lots of leftovers again..... yum. Thanks for the memory!

Whew........ Too full, lots of great tastes. And Lot of Leftovers too! But tonight we are going to make leftovers again for later this week as it will be very busy and I'll need all the help I can get! Rosemary Maple Pork Tenderloin, Roasted Garlic Potatoes, Spinach Salad. What about you? Leftovers or something new?

ok ... y'all have done it now ...... I'm adding to my very simple easy peasy menu Adding: Sweet Cream Sherry Portabello Mushrooms for an appetizer Deviled Eggs as part of dinner Whew .... Hopefully not adding more and a correction --- the Caramel Apple Tartlets are more a Crostata than a Gaulette. I was mistaken in the culinary name .... I should go with easy peasy pie/tart as the name. and FYI ... the filling is so switchable up to whatever you really want. I've done peaches, blueberries, strawberries, mixed fruit, plums, etc .....

I cheated this time and they are frozen I am making the cream though. If I weren't cheating, usually I make a gaulette (sp?) with circles of pie crust, apple pie type filling (homemade or canned) centered on the crust and bake rustic style (pull up side around filling but leave a gap in the middle). Then either make or use jar caramel sauce and drizzle. Cinnamon Whipped cream is regular whipped cream with a little vanilla and cinnamon added at the very end of whipping. Smoked Turkey Breast with Wild Rice, Pecans, Cranberries & Oranges Steamed Broccoli Cranberry Relish Caramel Apple Tartlets with Cinnamon Whipped Cream Wine & Beer I'm hosting - me and my husband WIll inject & rub the turkey this afternoon and let it sit overnight in the frig. Tomorrow morning I just make the rice stuffing mixture and tie the breast up. DH will be smoking it for 7-8 hours. Making it really easy peasy

I'm not brining but will be injecting and rubbing down the breast I bought and letting it sit overnight -- then we will be wild rice mixture as stuffing and smoking and my injection includes OJ concentrate and the rub includes garlic and more OJ.

I don't have problem looking at the problems and what could/should be done. There are no discussions around here just bashing if you don't scream to the clouds that you feel the same way. I haven't posted what my opinion is, so how do you know it? It was a diversion to try to instill a bit of fun. and again ..... have a nice day. I know, really. That is what we do a lot .... make a batch of great food and freeze a portion &./or have some later in the week. Did that last week with Taco Chili. I see doing regular chili coming soon HI!
