I went to a very high ranking high school and got good grades, got accepted to great schools but if you can't afford them, you make other choices. No cooking before freezing but you will have to after you thaw them out as they will be mushy. If I have time, I prefer to peel them first - drop in boiling water for 10-30 seconds after you make an X at the bottom and they peel really easily. I cut them into quarters and just throw into a freezer bag after they are peeled. If you don't peel, then when cooking the peel will drop off - but I find it a pain to pull them out at that time. You can peel them after you freeze and before throwing them in a pot, again it is a little bit of a pain. editted to add: I use these frozen/thawed t

My Grandmother, then later my mother and one of my aunts, made a homemade chili sauce which I absolutely adore. Takes cooking lots of tomatoes and other ingredients overnight and lots more hours. My last jar was last year, don't think I will get more unless I make it myself but not sure I can take it as it make a TON and I only eat it I freeze a lot of tomatoes to make sauce here and there throughout the winter - blanch them or not, they are great! DH pickles Jalapenos ... the foolyas and others .... uses about the same recipe as his regular pickles. They are very good on sandwic
