I watched Gordan Ramsey fry steak in a cast iron skillet. He throws in some butter and crushed garlic. Scoops it over it, flips it and does the same thing. You want a good sear On both sides. You cook 'em hot and for a short amount of time. I like a little blood. I cook bone in rib eyes and OMG they are so good!! And I always let mine lay out and get to room temperature. Covered in Kosher salt and fresh ground pepper. And then fry 'em up.
