Do you know that in your major retail grocer Deli dept, rotisserie chickens are monitored by FOUR, YES FOUR, different temperature logs. Cold holding, hot holding, cooking, and cold holding logs....just to ensure that NO CHICKEN is not cooked, cooled, and HELD at the proper temperature because they take it for granted that EVERY chicken coming into that store has naturally occurring salmonella. And the ONLY way to control it is with proper TIME and TEMPERATURE control
