So I had this beautiful watermelon to cut this afternoon. When I put a knife into it, it just split like crazy. It was a beautiful melon, sweet and tasty, except it was mushy, yuck. Really, just yuck. Well, not wanting to waste that wonderful sweetness, I looked on the internet to find out what to do with mushy melon. Low and behold, the first thing I found was granita (basically slushy frozen juice). So, loving the adventure of testing out something new, I juiced the melon, placed some of the juice in the freezer and it's lovely and slushy now. I'm taking it to a friend's house for girl's night. The rest of the juice will be used for watermelon lemonade - soooo tasty; and some of the puree is in the dehydrator to make fruit leather. Now I wonder why I have not done this years ago. I hate wasting and now I have found a way to have a wonderful treat. Anyone else found a good way to use mushy watermelon?
