It's best to boil it though for a about an hour and a half to two hours, so the meat will be tender. And always be careful removing the bladder when you're gutting them, as to not pop it and let the urine get into the meat...also remove all entrails ASAP, (while the animal still has relatively warm blood inside.) These tips will keep the gamy flavor out. And remember- a squirrel lives on one of the most nutritious diets there are...whole grains and nuts. One of the best things to use the meat for is Brunswick Stew though. Boil the meat after marinating it in red wine vinegar for about an hour. Link to post Share on other sites

I've always cooked it in the crock pot to let the meat fall off the bones, then you use it like you would chicken. It's great in a casserole, just takes about 10-12 squirrels to make a good meal. They have a long hunting season, and on the WMA's you won't run into alot of folks going after them. Paulding Forest is covered up with them. Link to post Share on other sites
