I just made this for my visiting cousin and she loved it! She rarely eats grits because of the texture and I told her it wasn't cooked properly--I cook my grits for about an hour and it turns out sooooooo creamy!!

How much butter and oil are you using? Pecans will dry out a cake... You should be using 2 cups of butter and maybe a half cup of oil...or add some pineapple or apricot sauce (a little bit).
