  1. Sweet and Spicy Bacon Chicken

    4 chicken breasts cut in thirds (12 pieces)

    Bacon slices

    salt and pepper to taste

    garlic powder

    chili powder

    brown sugar

     

    Cut each breast into 3 pieces, season all the chicken with the spices, then wrap a bacon slice around each piece, roll in brown sugar and place into an oven proof dish....make sure you have some olive oil in the dish too, like 2 or 3 tablespoons is fine {I skipped this since I grilled them. I honestly think you could coat your dish with nonstick cooking spray instead to save a few calories}.

     

    Bake at 400 degrees for 30 to 40 minutes or until chicken is cooked through and bacon is nice and brown and crispy. Delicious served with mashed potatoes with some of the gravy from the chicken drizzled on top.

     

    **Also great on the grill! No juices to drizzle on anything, but still delicious!

  2. How to make homemade Twinkies

    (makes 25 - 2x3 inch cakes)

     

    Cake Ingredients:

     

    4eggs

    1/2 cup butter, melted and cooled to lukewarm

    1 cup water

    1 (5.1 ounce) package instant vanilla pudding mix

    1 (18.25 ounce) package yellow cake mix

     

    Filling Ingredients:

     

    1/2 cup butter, room temperature

    1 (8 ounce) package cream cheese, room temperature

    5 cups confectioners sugar, sifted

    1 (8 ounce) container frozen whipped topping, thawed

    1 teaspoon vanilla extract

     

     

     

    Directions:

    1. Preheat an oven to 350 degrees. Grease and flour two 10x15 inch jelly roll pans.

    2. Beat the eggs until combined; stir in the melted butter. Add the water, pudding mix, and yellow cake mix, stirring well to combine. The batter will be very thick. Divide the batter between the prepared pans, spreading it evenly.

    3. Bake until the cakes spring back when pressed lightly with a finger or a tester comes out clean, 15 to 20 minutes. Cool completely on wire racks.

    4. To make the filling, combine the room-temperature butter, cream cheese, and confectioners sugar. Beat until smooth. Stir in the whipped topping and vanilla extract.

    5. When the cakes are cool, spread the filling mixture on top of one cake layer. Place the second cake layer on top of the first, and cut into bars. Wrap each bar in plastic wrap and store in the freezer.

     

    Sugar Free Version

     

    Ingredients

     

    One box of sugar-free yellow or white cake mix

    Two boxes of Jell-O Cook & Serve Sugar-Free, Fat-Free Vanilla Pudding & Pie Filling

    Three and one-half cups of non-fat or low-fat milk

    Square cake pans

    Non-stick, calorie-free cooking spray

     

    Directions: Make cake batter according to box directions. Pour into square cake pans sprayed with calorie-free cooking spray and bake. Cool completely. While baking, stir boxes of pudding mix into three and one-half cups of milk in large saucepan, using whisk. Stir constantly on medium heat until it comes to a full boil. Pour into bowl and cool. Cut the cake squares into Twinkie-sized shapes. Arrange on a platter. Spoon two tablespoons of vanilla pudding mix onto each square, then cover with another square. Refrigerate until ready to serve.

  3. My wife makes it in a crock pot. Below is Paula Deens recipe

     

    2 cups uncooked elbow macaroni

    4 tablespoons butter

    2 1/2 cups grated sharp cheddar cheese

    3 eggs (I omitted the eggs)

    1/2 cup sour cream

    1 (10 3/4 ounce) can condensed cheddar cheese soup

    1/2 teaspoon salt

    1 cup whole milk

    1/2 teaspoon dry mustard

    1/2 teaspoon black pepper

    Directions:

    Boil the macaroni in water for six minutes. Drain.

    In a medium saucepan, mix butter and cheese. Stir until the cheese melts.

    In slow cooker, combine cheese mixture and add the eggs (I omitted the eggs), sour cream, soup, salt, milk, mustard and pepper. Add the drained macaroni and stir again.

    Cook on low for 2 1/2 hours, stirring occasionally
