Our beefsteak garden went gangbusters, so I have too many tomatoes to deal with... even with family visiting all last week. (we ate BLT's (baloney or bacon) and salads all weekend...) My first time making salsa... I am using this recipe : http://www.food.com/recipe/mi-casa-salsa-from-costa-mesa-restraunt-518407 It is cooking on the stove now and smells delicious... I should end up with about 6 jelly jars of premium summer salsa, everything was homegrown, except the lime juice and jalapenos. (My South Georgia friend pickled the jalapenos last summer...)

Guess i'm gonna hafta cook it... Hubby said the same thing. Thank you...

Can I can fresh salsa without cooking it first ? ? ? I want to make some pretty jelly jars of fresh salsa, but most recipes say you have to cook it down first. The jars would be in the bath for 30 minutes, and I am planning to use lime juice for acid. Canning experts please help...
