Thursday Dinner Thread - Seafood in Parchment Bags

This is a neat meal with little clean up.

 

On a piece of parchment paper, I lay our a Cod, [or Mahi, Snapper, Grouper, etc.] fillet, some thinly sliced sweet onion, mushroom slices, grape tomatoes and 3-5 shrimp, depending on their size. Some dots of butter, fresh parsley and tarragon, a squirt of lemon juice and a slice, a splash of white wine, salt and pepper.

 

Fold the long sides left to right, like closing a paper bag, and then fold and tuck the ends back up underneath and set on a baking pan with sides. Bake at 350F for 15-20 minutes.

 

Angel Hair Pasta or Basmati Rice with a light cream sauce like an Alfredo go well with it, and maybe broccoli or asparagus. A garden salad and crusty baguette to soak up the juices.

 

A nice Pino Grigio goes well with it too.
