Leftovers.. whatever is in my fridge I have to much work to do..
LOL.. Tilapia is it a fishy tasting fish or is it mild like Flounder

It's mild -- I don't like fishy fish and I LOVE Tilapia -- We had it last night I grilled it, had boiled shrimp, rice pilaf, and green beans -- YUM YUM!!!

Very mild we had some the other night. with some shrimp scampi and a salad

Not sure about tonights dinner yet. I'm still at work.

put it in Italian dressing and pop it in the oven! Yummmm!!

Where do you get your tilpia? I want fresh from the sea (not farm raised which have antibiotics and mercury) and the only place I have found it is at Harry's.

Try this! They are soooo good and very easy to make. FYI they are jsut as good without the full amount of whipping cream on top.

Creamy Chicken Enchiladas


1 tablespoon butter or margarine
1 medium onion, chopped
1 (4.5-ounce) can chopped green chiles, drained
1 (8-ounce) package cream cheese, cut up and softened
3 1/2 cups chopped cooked chicken breast
8 (8-inch) flour tortillas
2 (8-ounce) packages Monterey Jack cheese, shredded
2 cups whipping cream

Melt butter in a large skillet over medium heat; add onion, and saute 5 minutes. Add green chiles; saute 1 minute. Stir in cream cheese and chicken; cook, stirring constantly, until cream cheese melts.
Spoon 2 to 3 tablespoons chicken mixture down center of each tortilla. Roll up tortillas, and place, seam side down, in a lightly greased 13- x 9-inch baking dish. Sprinkle with Monterey Jack cheese, and drizzle with whipping cream.

Bake at 350° for 45 minutes.

Yield: Makes 4 to 5 servings

I'll say what's not for dinner--the roast I put in the crock-pot this morning. I came home this afternoon and the power had gone off about 6 hours ago, so there it sat with no heat.

It's looking to be a Dominos kind of night.
