I can't figure out whats for dinner. I do not feel like stopping at the store on the way home and going home and cooking. So what is everyone else. Give me some ideas. I am almost leaning toward's Sal's. I might pick it up on the way home from work.

I still think we need to have a new forum for recipes. Ideas people give help, but if people posted their favorite recipes, everyone could try out each others. For example, I would love a good potato soup recipe. Anyone got one? That would be good on a night like tonight.

Here's a good one...not friendly to the waist but who cares!?

Potato Soup

2 tablespoons butter
1 cup diced onion
1/2 cup diced celery
1/2 cup diced leeks
1/4 teaspoon chopped garlic
2 tablespoons flour
1 quart milk
1 bag frozen diced potatoes
1 can chiken broth
1 tablespoon salt
1/4 teaspoon white pepper
1 teaspoon dry thyme
1/2 cup heavy cream

In a soup pot, melt butter over medium heat. Add onion, celery, leeks and garlic. Saute for 3 minutes, mixing often.

Remove from heat and add flour, mixing well.

Add milk and whisk vigorously. Add chicken broth.

Slowly bring to a boil, mixing often. Reduce heat to a simmer.

Add potatoes and seasonings; simmer 20 minutes.

Finish with heavy cream. Serve.

Mine is similar ... but not any friendlier to your waist!

Potato Chowder
2# potatoes, peeled & diced
6 strips bacon, diced
1/2 to 1 cup onions - we use Leeks (1 to 2)
3/4 C diced celery (optional)
2 carrots, diced
1 & 1/2 C water
1 boillon (sp?) cube
1 & 1/2 tsp salt
1/4 - 1/3 tsp pepper
1/8 tsp cayenne pepper
1/4 tsp dried thyme, crushed
3 C milk
2 TBLS Flour
1/2 C Water

Saute bacon with onions/leeks (and optional celery) in a LARGE soup pot for a few minutes until onions/leeks are cooked and bacon is cooked (but will not be browned). Add carrots for a couple of minutes. Add potatoes, water, buillon and seasonings. Cover and cook gently until veggies are tender. Add milk and heat throughly. Combine flour and extra water in jar or container to ensure they are smooth. Add to chowder and cook, stirring occasionally until chowder thickens slightly ..... makes about 2 quarts.

variations are to add clams, oysters or firm fish in chunks to the mixture about when you add the veggies ....

Lots of the meals I've read sound so wonderful! we are having chef salad with cheesy garlic bread .....
