Potato Soup receipe from Max & Erma's:
4 oz bacon, cut into 1/4 inch pieces
1 small yellow onion, 1/4 inch dice
1 1/2 ribs celery, 1/4 inch dice
1/2 cup flour
4 cups chicken broth
3 cups potato, 1/2 inch cubes (about 2 medium baking potatoes)
1 cup half-and-half
1/4 teaspoon ground white pepper
1/4 teaspoon ground black pepper
1 tablespoon salt (optional)
1/4 pound sharp cheddar cheese, grated
(for garnish - bacon, cheese and green onion)
Place heavy stockpot over med-high heat, add diced bacon. Cook, stirring frequently, until bacon is brown, 5-7 minutes.
Immediately add onions and celery and saute until soft, about 5 minutes.
Reduce heat to low and add flour to veggies and bacon. Cook over low for 5 minutes to cook out the raw flour taste.
Add chicken broth and potato cubes. Increase heat to med-high and bring to a boil.
Cover, reduce heat to medium and cook for 20 minutes, or until potatoes are tender.
Add half-and-half, white and black pepper and salt and simmer for 5 minutes more.
Add cheese and stir until melted. Taste and adjust seasonings.
Garnish with crisp bacon, grated cheese and diced green onions if desired.
I made this today and it is DELICIOIUS! Although, I excluded the onions. I would recommend not adding salt. Next time I think I'll add another cup of potatoes too.

Max and Erma's is a restaurant on Mt. Vernon Hwy. in Dunwoody. I also have this recipe and have been making this soup a couple of times a year for several years now. My family loves it. I usually double it and freeze some for later. The white pepper is key.

We love potato soup and I found a way to make it faster. Instead of dealing with the potatoes use the frozen hashbrowns that are diced. They cook in the broth in just a few minutes.
MY AVATAR: My sweet boy was feral and is still skittish but he is my sweetheart! He and his twin sister, Belle, were 2 on December 28th, 2008. They were rescues from the Cherokee Humane Society.

Sounds great, I will try making it!! Has anyone had O'Charley's potato soup? It is SOOOO Yummy!!! This one sounds just as good if not better though, thanks!!!

The hash browns is a good idea. You can also find cubed potatoes in a can in the canned vegetable aisle. I have found that the Butter Gold potatoes at Walmart taste the best of any tater out there; that's what I used.
