I know it's a little early, but since I'm using the crock pot for dinner, mine is already cooking.

I put together a yummy taco soup. The basic recipe came from the "A Year of Crockpotting" website, though I've made it before--I just wanted to check out her recipe. And as always, I didn't follow the recipe. I didn't have any pinto beans or kidney beans in my cabinet, so I used white and black beans. And though her recipe called for two cans of each of kidney and pinto beans, I used one can each of the white and black, and I can't imagine needing any more beans than what I have in there. I also added chopped onion and minced garlic, which she didn't have in her recipe. smile.gif

Here's the recipe I used. It filled my crock pot to the rim--so it's a LOT of soup.

Crockpot Taco Soup

--1 can black beans
--1 can white beans (I used Great Northern)
--2 cans of corn
--1 14.5 oz can of diced tomatoes
--1 14.5 oz can tomatoes and chiles
--1 packet taco seasoning
--1 packet ranch dressing mix
--1 lb browned ground turkey or hamburger (I used turkey)
--1 small onion, chopped
--1 tsp minced garlic
--2 cups water

--shredded cheese and sour cream for embelishment (optional)


The Directions:

--brown meat with onion and garlic
--drain fat and add to crockpot
--sprinkle seasoning packets on top of meat
--drain and rinse the beans and add
--add the ENTIRE contents of the corn and tomato cans
--add water and stir

Cover and cook on low for 8-10 hours or on high for 4-5. The longer you cook soup, the better the flavor gets, so if you have the time, opt for cooking on low.

Serve with a handful of shredded cheese and a dollop of sour cream.

Baby back ribs and pulled pork shoulder (frozen from previous makings), baked beans, some kind of green vegie. If I get out to the store, I might get some olives and make a greek salad. But, that's a big if.

We are having hamburger helper..i cooked the meat yeasterday since I got off work early so all i have to do is throw it together when I get home.....

i cooked every night since sat. but got request for my "boiled burgers" so guess i will do that...hadnt thought about it till now so i guess i better go thaw some beef...thanks.

Here's an other one for Pizza Soup. I think I'm gonna try it next week.

Crockpot Pizza Soup


--1 jar (14 oz) of pizza sauce
--3 empty jars full of water
--1 green bell pepper, seeded and chopped
--1/2 red onion, chopped
--1 cup sliced mushrooms
--1 cup baby tomatoes, cut in quarters (or 1 can diced tomatoes, drained)
--2 already-cooked Italian sausage
--1 cup sliced pepperoni, cut in quarters
--8 fresh basil leaves, chopped (or 1/2 T dried)
--1 T dried oregano
--1/2 to 1/3 cup of dried pasta (if your pasta is tiny, use 1/3 cup. if it's big, do 1/2.)
--shredded mozzarella cheese (to add later)


Wash and prepare veggies. Dump them into the crockpot. Cut up the sausage into small pieces--and add to crockpot. Cut up the pepperoni, add it, too. Add basil and oregano. Pour in the pizza sauce, and follow with three empty jars of water.

Cover and cook on low for 7-9 hours. Everything in this is already cooked, so you are really only heating through and allowing the flavors to meld.

Thirty minutes before serving, add the dry pasta, and turn to high.

Garnish/top with shredded mozzarella cheese.


Doesn't that sound GOOD?

Editing to add: I think when I make it, I'm gonna toss in a can of red kidney beans (drained and rinsed), too. I never follow recipes. blush.gif

That does sound good, but not very carb friendly. I did find some carb healthy pasta the other day. It's says there is only 5 digestible grams of carb in a cup (if I remember right). That's not too bad if that is true.

I have butter beans in the crockpot. I'm going to fix boiled cabbage, stewed potatoes, meat loaf (possibly..there are a few hamburger steaks left from last night), and corn bread to go with the beans. Every now and then I get in a ""Granny menu" mood, or as my daughter calls it "old folks food"..lol It has taken me 10 years, but I can FINALLY fix green beans like Granny always did...lard, fat back, and cook the devil outta them. Not healthy but ohh sooo good!

Well since I am on day one of the "FAT BURNING CLEANSE DIET" that I think Caped Crusader posted, I will be having soup and fruit! That is also what I am eating right now. I know why people loose weight on this diet becuase after about the 2nd bowl of soup you cant eat anymore hense you loose weight from not eating.

The rest of the family will be having grilled cheese and soup or chili.

The "Year of Crockpotting" blog lady said she used 1/2 cup Trader Joe's brown rice penne when she made the recipe. I'd guess something like that would be more carb friendly? She also has a child that has to be gluten-free, so all of her recipe ingredients have gluten-free options.

I got the same diet... but I tell ya that soup has a lot of stuff in it I do not like. LOL


so I am still debating on it LOL

as far as supper goes, hubby called and wants to go out so I guess we are going out ...

It may be. I made a pasta, chicken, brocoli, and cheese meal the other day. It turned out really well. I used the smart carb pasta. I was not sure how it would turn out using that, but it was actually very tasty.

I forgot to add...she challenged herself to use her crockpot EVERY DAY in 2008, so she has 365 recipes on her blog. The blog is now "complete" since the year ended Jan 1, but if you scroll down, she has all of the recipes indexed on the left-hand side of the page. smile.gif

Tonight is "what ever you find" for hubby. I am going to the hospital to see Kelwil. Last night I made chicken with spinach. The recipe was put up by Lilbitofeverything... We also had sweet potatos with it. OMG!! IT IS SO SO GOOD!!!!!

Is is basically shepherds pie with tater tots on top.

1 lb ground beer (or I use turkey)
1 small onion, finely chopped

1/4 cup milk
1 cup frozen mixed vetgetables
1 cup shredded cheddar cheese
1 lb (1/2 of 32 oz pkg.) frozen tater tots

Heat oven to 375 F. Brown meat with onions in skillet, stirring occasionally; drain. Spoon into 8 inch square baking dish.

Mix soup and milk; pour over meat mixture. Top with layers of mixed vegetables, cheese and potatoes.

Bake 45 min or until potatoes are golden brown and casserole is heated through.

I put together a yummy taco soup. The basic recipe came from the "A Year of Crockpotting" website, though I've made it before--I just wanted to check out her recipe. And as always, I didn't follow the recipe. I didn't have any pinto beans or kidney beans in my cabinet, so I used white and black beans. And though her recipe called for two cans of each of kidney and pinto beans, I used one can each of the white and black, and I can't imagine needing any more beans than what I have in there. Here's the recipe I used. It filled my crock pot to the rim--so it's a LOT of soup.

Crockpot Taco Soup

--1 can black beans
--1 can white beans (I used Great Northern)
--2 cans of corn
--1 14.5 oz can of diced tomatoes
--1 14.5 oz can tomatoes and chiles
--1 packet taco seasoning
--1 packet ranch dressing mix
--1 lb browned ground turkey or hamburger (I used turkey)
--1 small onion, chopped
--1 tsp minced garlic
--2 cups water

--shredded cheese and sour cream for embelishment (optional)


The Directions:

--brown meat with onion and garlic
--drain fat and add to crockpot
--sprinkle seasoning packets on top of meat
--drain and rinse the beans and add
--add the ENTIRE contents of the corn and tomato cans
--add water and stir

Cover and cook on low for 8-10 hours or on high for 4-5. The longer you cook soup, the better the flavor gets, so if you have the time, opt for cooking on low.

Serve with a handful of shredded cheese and a dollop of sour cream.


Bet it would be good with some crumbled tortilla chips added too!
