my brother and his girlfriend are vegetarians, and i thought i'd surprise them with a few dishes just for them, at our christmas party. i've been googling like CRAZY, but i thought i'd see if anybody here might have a few recipes they could recommend. i'm looking for main dishes, side dishes, or dessert. nothing specific.

Veggie Spinach Burgers

Bag of frozen chopped spinach - thawed
Italian bread crumbs
Parmesan cheese

Combine spinach, bread crumbs and parmesan cheese to make "burgers"
Fry in non-stick pan with olive oil
Season to taste (salt & pepper)
Serve with or without buns

I generally make a traditonal lasagna and a veggie style.
Fried bow tie pasta with parm. chesse is a fav. for everyone, as is spinach dip and hot artichoke dip.
You can find lots of yummy veggie meats at Ingles in the produce dept. and a few in the freezer section.
