Quick and inexpensive dinners - Recipes

This one I use with whatever I have on hand. I don't always have the coleslaw mix or shredded carrots, and I have used it with hamburger meat. The kids and DH love it!


Pork Lo Mien

1-1 ˝ lbs ground pork
1 c. chopped onion (optional - & frozen is fine)
Soy sauce
3 c. broccoli florets (frozen is fine)
4-8 oz. can mushrooms
1 c. shredded carrots
3 c. coleslaw mix
2 packs. Of oriental-flavor ramen noodles

1. Cook pork and onion

2. Drain mixture

3. Add back to pot. Cook on med-high. Add the following ingredients, one at a time, and stir in well before adding the next: broccoli, mushrooms, carrots and cabbage. Sauté all together for a few min. until veggies look slightly tender.

4. Add 3 c. of water. Cover and bring to a boil. Boil 2 minutes.

5. Crumble in noodle and add seasoning packets from ramen noodles. Simmer, covered, for about 2 min. or until noodles are almost soft.

6. Uncover and simmer a few more min. until noodles are soft and most of the liquid has evaporated.

Taco Pie:

1 lb. lean ground beef
1 pkg. taco seasoning
1 container queso dip
1 pkg. flour tortillas
salsa

Pre heat oven to 350. Brown the ground beef, drain and mix in taco seasoning. Put tortilla in cake pan, layer with meat and then cheese. Repeat layers like lasagna. Top off top layer with tortilla and cheese. Bake 25 minutes. Once the top layer of cheese cools, top with salsa. Cut and serve like a pie.
Stupid SHOULD hurt.

Taco Soup

1 1/2 LB. Lean hamburger meat
1 onion (chopped and sauteed with Hamburger meat.)
Then add
1 cup water
1 pkg. Of taco seasoning mix
1 pkg. Of Ranch Dip Dressing mix
1 can Rotel
1 can diced tomatoes
1 can of pinto beans
1 can of great northern beans
1 can of niblet corn

Do not drain any of the ingredients. And do not add to or take away from this recipe. Stir well and let it come to a boil then simmer for about 2 or 3 hours. Serve with tortilla chips.

I love this soup. If you like it spicier you could add one chipoltle (sp) to it.

Chicken Pot Pie

2 pie crust (refridgerated section)
2 cans diced potatoes-drained
1 can carrots
1 can peas
2 cans cream of chicken soup
1 whole chicken fryer

Boil chicken in a big pot of water until done. Let cool and shread chicken. Add all ingredients into mixing bowl with shredded chicken. Line a 9x13 cooking pan with bottom crust, add ingredients, and then cover with other crust. Cook on 350 for about an hour or until crust is brown.

Tried this tonight. It was very good.


CROCK POT POTATOES

1 lg. pkg. frozen hash browns
1 med. onion, chopped
1 sm. carton sour cream
2 cans cream of potato soup
1 soup can of milk
3/4 lb. Velveeta cheese, cubed
1 stick butter

Mix all in crock pot on high. Stir again after 1 hour then cook 4 hours on high, then 8 hours on low.
Or this recipe can also be made using the oven method baking this in 325 oven stirring once baking until brown on top, about 1 1/2 hours. This will serve 10 to 12 guests.
