What is for lunch today? And while we are at it, dinner?

I had a fried balogna sandwich for lunch (with mustard only smile.gif ) and I am making a pot of chili for dinner.
Just wonder what everyone else is eating today!

We had pork chops Sat. night, they were really thin and we did them with bread crumbs and baked them. They were fabulous!

I made meatloaf hamburgers for lunch with fries and I have no idea what we're having for dinner. I know we're having company so I'd like something kind of nice. Any ideas?

Just whipped up Penne pasta with garlic and herb sauce and a little cajun seasoning, andouii sausage and tomatoes. Garlic bread. Spicy and yummy!

One of my favorites (that everyone loves) is bacon wrapped shrimp. Just wrap the shrimp in bacon and fry in a skillet (I just use toothpicks to secure the bacon while it cooks and remove them before I serve it). I serve it with a garlic butter dipping sauce. It really is easy and very yummy!

Spaghetti is always easy and good for a crowd. Get a bag o' salad and bread, done!

Leftover BBQ ribs, potato salad and baked beans for lunch.


Toinght's supper will be spaghetti and garlic bread.

OH LAWD!!!!!!!!!!! The shrimp ooh la la or the whole sha-bang with all of the seafood??

I am not a big seafood fan, but I *love* shrimp and that ooh la la is unbelieveable!!!!!!!!

Beef Fajitas.

I made beef/lamb soup stock over the weekend, and grilled about 20 pounds of beef back ribs I got at the Buford Highway farmer's market Friday for $1.29 a pound. I cut all the meat off them after cooking, and then used the bones with the lamb and other beef bones I had in the freezer and made 12 quarts of stock. Good stuff for making soups, gravy, sauces, and red-wine reduction. Can't buy it in the store.

So we will have fajitas with the meat tonight. I made a big batch of pico de gallo Saturday evening, and some avocado and guacamole salsa as well. I love using up leftovers.

And I have a nice Spanish Temperillo red wine to chase it down.

Probably left over Bar-B-Q chicken tonight for dinner....he made that last night too! Sam's marked down all their meats when he went by yesterday afternoon so there's enough for the 2 of us for the next 2 days! Yummy!
