I need your best meatloaf recipe.

I probably just need to make a few adjustments to the recipe I normally use, but I'd love to know how you make yours.

This is a simple recipe and I love it!

Boston Market Meatloaf

1 cup tomato sauce
1 1/2 tablespoons Kraft original barbecue sauce
1 tablespoon granulated sugar
1 1/2 pounds ground sirloin, 10% fat
6 tablespoons all purpose flour
3/4 teaspoon salt
1/2 teaspoon onion powder
1/4 teaspoon ground black pepper
dash garlic powder

Preheat oven to 400 degrees. Combine the tomato sauce, barbecue sauce and sugar in a small saucepan over medium heat. Heat the mixture until it begins to bubble, stirring often, then remove it from the heat. In a large bowl, add all but 2 tablespoons of the tomato sauce to the meat.

Use a large wooden spoon or your hands to work the sauce into the meat until it is very well combined. Combine the remaining ingredients with the ground sirloin; flour, salt, onion powder and ground pepper. Use the wooden spoon or your hands to work the spices and flour into the meat.

Load the meat into a loaf pan. Wrap foil over the pan and place it into the oven for 30 minutes. After 30 minutes, take the meatloaf from the oven, remove the foil and drain the fat.

Using a knife, slice the meatloaf all the way through into 8 slices while it is still in the pan. This will help to cook the center of the meatloaf. Pour the remaining 2 tablespoons of sauce over the top of the meatloaf, in a stream down the center. Don't spread the sauce. Place the meatloaf back into the oven, uncovered, for 25 to 30 minutes or until it is done. Remove and allow it to cool for a few minutes before serving.

Serves 4.

I use very lean beef so that it doesn't fall apart.

From memory:

1-1/4 or so of GB

1/5 cup of yeller musterd

2/3 cup uf ketchup.

Something like 5 Tbs of dried, minced unyinz.

About a 1/4 tsp of garlic.

About 1/8 tsp of cumin. Be careful with the cumin cause it'll taste like taco meet is of yee ain't careful.

I put about 15 crushed Saltines in with the mix.

I line the bottom of the whatever a small loaf pan would be called with saltines--not crushed. the best part is eating these crackers after it's cooked.

I don't put a glaze on it becasue of the heartburn. blink.gif

Hunts meatloaf fixins. Follow the recipe on the back of the can. I buy two cans, one for the meatloaf, and the other for the gravy. It is a family fav.

My husband created this recipe. The glaze is one thing that makes it so good.

2 lbs HB meat
2 eggs
Chopped onion
1/2 cup catsup
1/4 cup mustard
1 cup salsa
Bread crumbs
Garlic powder, onion powder, thyme, seasoned salt

Combine all ingredients. Be careful not to over mix it.

Cook about 1 hour at 325 then put on glaze and crank to 400 for 15-20 mins.

Glaze:

Grape jelly, worchestershire sauce, ketsup, soy sauce

It really is good. I'll try to get the measurements of each for yall. He's a good cook and just knows what to do.

Hubby says a little more ketsup than grape jelly and a squirt or two of worchestershire and soy. Hope that helps.

I had tasted a meatball recipe that included grape jelly. I would love the recipe, if anyone has it. Delicious!!!

I do at home in a number of cookbooks - seems like it's a combination of grape jelly and chili sauce. I'll try to find it after I get home from work.

Check out Paula Dean's cheeseburger meatloaf. I ate it at The Lady and Sons in Savannah and bought her book. Made it at home....just as good! Yummy!

Spinach Meatloaf

1 lb. ground beef
1 egg
1 1/2 c bread crumbs
1 c milk
1 1/4 t salt
2 T soy sauce
1 - 10 oz package frozen spinach, thawed, chopped and drained

Combine ground beef, egg, bread crumbs, milk, salt, soy sauce. Add spincah; mix well. Pat into a 9 x 5 x 3-inch loaf pan. Bake in 350-degree oven for 1 1/2 hours.

I'm not a meatloaf person, but I LOVE this recipe. It adds a little zing and some vitamins to the dish. Easy as pie as well!

M's Girl's Family Meatloaf
inspired by Murphy’s – Atlanta, GA

All these measurements are guesses - it's best when you just put in how much you think sounds good.

1 ½ lbs ground beef
1 ½ links (about ½ lb) Italian sausage, spicy or mild
2 tbsp dried oregano
2 tbsp garlic powder OR 6 cloves finely minced garlic
1 tsp salt (preferably kosher)
1 tsp pepper (preferably fresh ground)
1 egg
¾ cup bread crumbs
marinara sauce
parmesan cheese, shredded, for garnish

1. Preheat over to 350F.
2. In mixing bowl, mix beef, sausage, bread crumbs, egg, oregano, garlic, salt, pepper.
3. Shape into loaf on metal rack over cookie sheet so fat will drain away. Can also use just baking pan or press into loaf pan.
4. Cook to 160F (bring out of oven at 155F, will continue to cook to 160F outside oven). This will take approximately 25 minutes.
5. Heat marinara sauce on stove and serve over meatloaf. Sprinkle with cheese.
