anybody got any different ways to cook tilapia besides just batter and frying ?

Tilapia does pretty good blackened.

Brush with Olive Oil. Sprinkle Chef Paul Prudhomme's Seafood Magic on each side. Grill. Make fish tacos with tortillas, shredded cabbage, cheese, tomato, and whatever else you want.
Mix a sauce of half sour cream, half mayonnaise and a couple of tablespoons of taco seasoning. Serve on top.

While I love to grill fish, my oldest daughter has a recipe that she won't share with me...but I think I have it figured out...she lines a baking dish with aluminum foil (enough around the sides to close it up), then uses olive oil, lemon, and bay seasoning. Close it over with the foil, then bake it. Man....it's awesome!!! The only thing I hate about baking this time of year is that it makes the house get hot and wears out my A/C. So when it's hot outside, she does the same thing, only fries it in a skillet. You can baste it in melted butter and lemon juice when frying, but don't use any oil...just butter. Or just olive oil, depending on your health guidelines. ;)

Just don't mix the butter with the oil.....bad news! Use either one or the other.

Bake; 375 about 20/25 min

Olive oil topped with Greek Seasoning (on shelf in grocery store). I always serve with Mango salsa on the side.

Tilapia Florentine

Sprinkle some cajun spice over fish (not too much but it does add flavor). Saute in olive oil. Remove fish and keep warm. In same pan, add finely chopped fresh garlic and chopped red onion. Cook in oil until soft (try not to brown it). Add bag of FRESH baby spinach and stir until spinach has wilted. Make a bed on the plate with spinach and add fish on top. Top with chopped tomato. That's it.

I do packets - either foil or parchment paper - place fish on a section of either - cover with whatever you like - the lemon and old bay is a good one - seal up in the foil/paper - bake at 350 for about 20 minutes. They can also be put on the grill if wrapped in foil.

I also make a mixture of chopped green peppers, tomatoes,, onions, and garlic. I put the fish in a baking dish, a little squeeze margerine on top of the fish, put the vegetable mixture, then a little lemon juice. Bake at 350 for about 30 minutes. Hubby's favorite (though he does love it with orange roughy better).

I will also bread them with italian bread crumbs and cook with a bit of olive oil. But, you've got to have the family sittiing ready to eat -- this is best straight out of the pan.

I like to take it and dip it in melted butter and then coat it with panko (they make lemon pepper panko that's better than just plain ones) and bake it in the oven for about 25 minutes.

Five-Spice Tilapia

1 pound tilapia fillets
1 teaspoon Chinese five-spice powder
1/4 cup reduced-sodium soy sauce
3 tablespoons light brown sugar
1 tablespoon canola oil
3 scallions, thinly sliced


Directions

    Sprinkle both sides of tilapia fillets with five-spice powder. Combine soy sauce and brown sugar in a small bowl.
    Heat oil in a large nonstick skillet over medium-high heat. Add the tilapia and cook until the outer edges are opaque, about 2 minutes.
    Reduce heat to medium, turn the fish over, stir the soy mixture, and pour into the pan.
    Bring the sauce to a boil and cook until the fish is cooked through and the sauce has thickened slightly, about 2 minutes more.
    Add scallions and remove from the heat.
    Serve the fish drizzled with the pan sauce.
