Just don't mix the butter with the oil.....bad news! Use either one or the other.

Olive oil topped with Greek Seasoning (on shelf in grocery store). I always serve with Mango salsa on the side.

Sprinkle some cajun spice over fish (not too much but it does add flavor). Saute in olive oil. Remove fish and keep warm. In same pan, add finely chopped fresh garlic and chopped red onion. Cook in oil until soft (try not to brown it). Add bag of FRESH baby spinach and stir until spinach has wilted. Make a bed on the plate with spinach and add fish on top. Top with chopped tomato. That's it.

I also make a mixture of chopped green peppers, tomatoes,, onions, and garlic. I put the fish in a baking dish, a little squeeze margerine on top of the fish, put the vegetable mixture, then a little lemon juice. Bake at 350 for about 30 minutes. Hubby's favorite (though he does love it with orange roughy better).
I will also bread them with italian bread crumbs and cook with a bit of olive oil. But, you've got to have the family sittiing ready to eat -- this is best straight out of the pan.

1 pound tilapia fillets
1 teaspoon Chinese five-spice powder
1/4 cup reduced-sodium soy sauce
3 tablespoons light brown sugar
1 tablespoon canola oil
3 scallions, thinly sliced
Directions
- Sprinkle both sides of tilapia fillets with five-spice powder. Combine soy sauce and brown sugar in a small bowl.
- Heat oil in a large nonstick skillet over medium-high heat. Add the tilapia and cook until the outer edges are opaque, about 2 minutes.
- Reduce heat to medium, turn the fish over, stir the soy mixture, and pour into the pan.
- Bring the sauce to a boil and cook until the fish is cooked through and the sauce has thickened slightly, about 2 minutes more.
- Add scallions and remove from the heat.
- Serve the fish drizzled with the pan sauce.
