Halp! My Peanut Butter Fudge is not thick/hard,

I have made a pan of Peanut Butter Fudge and it won't harden up, how can I fix this?? Or ......do I just have a pan of fudge to eat all to myself, darn it???? :pardon: 8)

When this happened to me, I put it on top of ice cream. It was delicious.

Having to eat a 8 x 8 pan of fudge is not very good for a Diabetic, where do you live??? :rofl: :rofl:

I was going to suggest sending it to me. I'm usually pretty good at making things thick and hard.

That's my thank you to you Mrs G for that thank you that you sent me earlier that made me cry.

I've been making fudge for many years and have had that hapen to me twice. I believe it is caused when the right temp isnt reached when you're stirring in the sugar, evap milk and whatever your recipe calls for. My pro chef friend helped me with mine and gave me that info.

Unfortunately, it probably wont set up now. I started using a candy thermometer with mine and havent had that happen again.

I know how you feel. I did it, too :unsure: .

I had always seen candy thermometers but never really thought of using them for fudge. I was thinking like hard candy, taffy, caramel, etc. It's one of those classic, very inexpensive tools though that you'll use forever now that you know and will have one :) .


OH! :blink: BTW, once before the candy therm... I also had my sugar in my finished fudge come out very very grainy. It was almost like it didnt melt or if it did, only partially then a lot of it sort of "crystallized" together in small, little chunks. I coulda cried then, too. Again though, I really think it wasnt up to the correct temp before I removed it from the heat, even though it LOOKED right at the time.

We use the one my dad has been using for 25yrs. Its the secret recipe on the back of the "FLUFF" marshmallow jars.

I thought mine was pretty good but, I guess I didn't get it hot enough. I will try again.

I was just wishing for some homemade peanut butter fudge this evening. Haven't had any in years. It really is disappointing when it doesn't set right - but it still tastes good.

Can you try to reheat it and get it up to the correct temp? I would try it before I had to throw it away or something.....

Here is an easy one without using the marshmallow fluff stuff.

Peanut Butter Fudge
3 cups white sugar
3/4 cup milk
1 cup smooth or crunchy peanut butter
1 tablespoon butter
1 teaspoon vanilla

Mix sugar and milk in a saucepan on medium heat, stir constantly
to make sure all sugar is dissolved.
Bring almost to a soft ball stage on a candy thermometer (when a drop in cool water stays together)
Add peanut butter and continue to stir constantly on medium to high
(needs to boil) until soft ball stage again.
Remove from heat and add butter and vanilla then beat several minutes with an electric mixer until the mixture becomes stiff.
Turn onto a lightly buttered plate. Cool and cut into desired squares. Keeps well in a plastic container.
This one didn't set for me once but I think I gave up stirring too soon or over beat it with the mixer and it broke down.

That is good, but NOTHING replaces the old-fashioned fudge that is on the back of the old Hershey's Cocoa Powder tins. That stuff is fabulous and has a completely different texture than the creamy fudge that marshmallow creme fudge makes.

I agree with you 100%!!!!

That is the only king my Mom makes---and she usually has folks begging for it!!
