I need some good new recipes... I have tons of recipe books, you can find lots online but...

the "tried and true" recipes are ALWAYS the best!
Since it's winter, I am looking especially for wintry, comfort food...one dish stuff is GREAT or for the crock pot. And, if it's from your Grannie's, Grannie's Granny that's the creme' de la creme'!
You Pcommers always have the best of everything...so hit me!
p.s.
just occurred to me that comfort food is quite often the most economical too. Even MORE reason for it!

Papi and Baby’s
Easy Peasy Nice and Cheesy Chicken Cordon Bleu


Ingredients:

4 boneless skinless chicken breast
¼ teaspoon salt
1/8 teaspoon pepper
1 tablespoon Dijon mustard
4 slices swiss or havarti cheese
4 slices cooked ham
4 eggs
1 box chicken shake-n- bake

Directions:

1. Preheat oven to 350 degrees.
2. Coat a 7x11 baking pan with non-stick cooking spray.
3.Scramble eggs in a shallow bowl to use as an egg dip. Set aside.
4.Fill another shallow dish with 1 package of the shake-n-bake mix. Set it and the other packet of shake-n-bake mix to the side.
5.Place chicken breast between two pieces of wax paper and use meat mallet to pound chicken breast to ¼ inch thickness.
6.Sprinkle each piece with salt and pepper and spread Dijon mustard on one side.
7.Place 1 ham slice and 1 cheese slice on each piece and roll up.
8. Roll each completed chicken roll into egg wash and then into shake-n-bake mix.
9.Add additional shake-n-bake mix to the breading bowl as needed using the second packet of mix.
10.Continue till all chicken has been rolled, egg washed, and breaded.
11.Place each breaded chicken roll into the baking dish.
12.Bake 30-40 mins or until chicken is done all the way through.

Mom's Hamburger Casserole.

Ingredients:
1 lb groundbeef/chuck
2 cans pork n beans
2 cups shredded cheese...your choice of which kind....I prefer colby jack. Reserve approx 1/4-1/2 c of this cheese to put on the top
1 c BBQ sauce...I use Williams Brothers

Preheat oven to 350 degrees
Brown approx. 1 lb grond beef/chuck with some dried onion....and drain.

Spray a 8x8 or even 9x13 casserole dish with non stick spray

In a mixing bowl, mix together browned meat, 2 cans of pork n beans, and cheese, and BBQ sauce.

Pour into prepared casserole dish.
Sprinkle reseved cheese on top.

Bake at 350 for approx. 20-30 min....until cheese on top is melted.


Disclaimer....this is one of the Very few times this recipe has actually been written down. This is something I grew up with and learned it by watching my mom make it ( my recipe for cornbread is the same way).

I serve this with mashed potatoes on the side.

This is a one pan meal and I cut up my chicken into smaller pieces, instaed of having to cut the chicken on the plate. I sut the chcken into small pieces, dredge it in the mayo and onion soup mix mixture and slow cook in a frying pan, Oh my goodness, this is sooo good!!! I don't eat mayo on/in anything except potato salad, egg salad or tuna salad but, this is awesome!!!!! It's a Publix Apron Recipe. The Shrimp Enchilata was awesome, also.

Zesty Chicken Orzo
Ingredients

1/4 cup mayonnaise
1 (.87-ounce) packet onion gravy mix
1 1/2 pounds chicken breast cutlets
1 1/2 cups water
1 (10-ounce) can milder diced tomatoes and green chiles (undrained)
8 ounces orzo pasta



Steps

1. Preheat large sauté pan on medium-high 1–2 minutes. Combine mayonnaise and dry gravy mix in medium bowl. Coat both sides of chicken, using tongs, with mayonnaise mixture and place in pan. Add remaining mayonnaise mixture to pan and cook 1 minute on each side until chicken begins to brown.
2. Stir in water, tomatoes (undrained), and orzo until all ingredients are well blended. Cover and cook 4 minutes, stirring occasionally.
3. Reduce to medium; simmer (covered) 4–5 minutes, stirring occasionally, until most of liquid is absorbed and orzo is tender. Serve.

CALORIES (per 1/4 recipe) 520kcal; FAT 14g; CHOL 105mg; SODIUM 790mg; CARB 49g; FIBER 3g; PROTEIN 49g; VIT A 8%; VIT C 10%; CALC 4%; IRON 20%
