We always do tomatoes and cucumbers in the summer. This year, we haven't been as attentive to our little "garden" so I haven't gotten much out of it. We did Rutger tomatoes this year; I didn't care for them as much as other varieties. Anyhow, this is how I make my "salad":
Ratio 1 cucumber to 3 tomatoes, peeled and cubed (or cut into small, bite sized pieces) (the following ingredients are based on this ratio, so if you do more, multiply accordingly)
3 - 4 tablespoons of Italian dressing (we've been eating lite, and when I buy a new bottle, once it separates good, I squirt off all the oil I can)
3 tablespoons of spiced/herbed feta cheese
a generous sprinkle of dill and black pepper
I apologize for the ambiguity of the measurements; I tend to eyeball stuff I know how to make.

i do this with tomato, cucumber, onion, salt, pepper, and italian dressing that i make (to control the oil). so yummy!!
