Frozen Food Meal Ideas

Can anyone help me? I'm trying to come up with some meals that I can make and freeze for my family for when I have our baby. It will be 4 but only 3 eating. I know of lasagna but I need more ideas. Thanks for your help

Meatloaf heated up with a pack of instant mashed potatoes.
Chicken casseroles (lot of recipes on web)
Soups made with all the fresh veggies that are out there now.

Cook a beef or pork roast in the crock pot until it falls off the bone then shred it and mix it with BBQ sauce.
Pre mix a meatloaf and freeze it uncooked.
Brown some ground beef and mix in taco seasoning, manwich, or spaghetti sauce then freeze.
Pre mix and pat out hamburgers. Freeze them flat on a tray overnight then put them in a baggie in the morning.

My mom saves frozen food trays, and makes her own dinners. She lives alone, and its hard to cook for 1. She makes meals with mashed potato, meat and veggie then covers it with stretch n seal. You could just freeze a bunch of single serving sides, then all you would have to cook is the meat. Roasts are very easy. When I was a single mom, I would prepare a few meals on Sunday so they were all in the pan and ready to cook when we got home from work/daycare. That way we were eating quick, and healthy.

The Frozen El Monterey Cheese Enchiladas w/ Rice & Sauce are Delish! I get Black Bean soup from Publix & sautee some peppers & onions.....pour it all over the Enchiladas. Yummy!
