New Orleans Red Beans and Rice Cool weather meal

Something to warm you on a cool fall evening. The aroma is wonderful. biggrin.gif




New Orleans Red Beans and Rice

1 lb. red beans
2 or 3 ham hocks
1 cup chopped bell pepper
1 cup chopped celery
2 cups chopped onion
4 or 5 cloves chopped garlic
2 or 3 bay leaves
1/4 teaspoon oregano
1/4 teaspoon thyme
1 teaspoon cayenne pepper
1 tablespoon tabasco sauce
water, salt and pepper
1 lb. smoked sausage

Wash beans and add water to cover, bring to a boil,
turn off heat and let sit 1 hour, covered. Drain.

Add water to cover. Add all other ingredients except
sausage and cook till beans are very tender. Add sausage
and cook for 30 more minutes. Add more water as needed
during cooking. Serve over rice. (but I like them over cornbread)
I know you believe you understand what you think I said, but I am not sure if you realize that what you heard is not what I meant.
