I bought one at the Halloween Carnival (we were not forced to be PC back then) and was so glad I did. Citizens from all over the county had sent in recipes to be included in the cookbook, there is even one from my Mother and sister. Each person's name is at the bottom of the recipe. I can remember almost all of the contributors, most were personal friends of my family. We were a small town and rural county back then. I treasure this book today, most of the people whose recipes I still use have passed away.
I thought I would share some of the chocolate pie recipes.
Mrs. Edna Parker's Chocolate Pie
(Edward's Wife, we lost her this year. She helped with my Mother's baby shower before I was born)
2 cups milk
1 1/4 cup cup sugar
3 tablespoons flour
4 egg yolks
2 tablespoons butter
1 tablespoon vanilla
4 tablespoons cocoa
Cook until thick and pour into a baked pie shell. Make meringue with
the egg whites, cover pie and brown in the oven.
Mrs. Harold Fleeman's Chocolate Pie
(Mrs. Fleeman was the principal at Dallas Elementary all 7 years that I attended)
1 cup sugar
1/4 cup cocoa
2 eggs
2 tablespoons butter
2 tablespoons flour
1 cup sweet milk
1 teaspoon vanilla
Mix sugar, flour and cocoa thoroughly. Add milk and egg yolks. Mix well.
Cook until it thickens, Add butter and vanilla, Pour into a baked pie shell.
Beat egg whites until stiff and add 4 tablespoons sugar and beat until
well blended. Pile on filling and bake in moderate oven.
Mrs. Atha Adair's Chocolate Cream Pie
(Mrs. Adair taught voice lessons for many years and was an excellent piano player at Dallas Elementary)
1/3 cup cocoa
1 cup sugar
1 cup milk
2 egg yolks
1 pinch of salt
1 teaspoon vanilla
2 heaping tablespoons butter
5 heaping tablespoons flour
Mix all dry ingredients thoroughly. Beat egg yolks thoroughly and add milk.
Add all liquid to dry ingredients. Cook and stir constantly. When it is
ready to take from the stove, add butter and vanilla, Cream mixture
as you would potatoes. Pour into a baked pie shell. Top with meringue made
of 2 egg whites, 4 tablespoons sugar beaten stiff. Place in oven and brown.
