SWEET POTATO BISCUITS MMM MM GOOD!

Okay, by request here it is (lol):

You make your biscuits same as always, just don't use as much milk. Add baked, peeled Sweet Potato to your dough. (You can use can Sweet Potato's (drained) but they are not as good) If dough seems to dry add a little milk now. Now, how many Sweet Potato's you ask? You must guess (lol).
You want your dough to be light orange, so say to a biscuit recipe of 2 cups flour I would put 2 large sweet potatos'. Bake @ 400 until done! Heavy buttering while hot is a must!

Now you can do a search for sweet potato biscuits on the web and pull up many recipes. Some put cinnamon, nutmeg...lots of variations. This is a recipe here that has been in my family many many years and they are very good!

I used to work downtown Atl. and folks there would laugh at me when I talked of sweet potato biscuits. Making fun of this ol' Paulding County girl (redneck). So I made a pan one morning and took them in.........ALL GONE IN 5 MIN. blum.gif
They begged me after that to bring in more and I wouldn't hahahahaha.

That's right! Some people put sugar in their biscuits anyway. If you'd like you can add a little sugar. I wouldn't put much. But if you generally like your biscuits with a little sugar.....sure. I think it would be good! Think I'll add sugar next batch!

That's kind of like Yankee cornbread....Cornbread is NOT supposed to have sugar in it. ICK.

But I think I'll add a little bit to the sweet potato ones.

I assume that you use regular milk in these and not buttermilk?? Buttermilk and sweet potatoes doesn't sound like a good combination to me.

Thanks for the recipe hope. It is the time of year for those good old sweet potato biscuits. I hope you don't mind that I add my recipe to your thread.

I have this little recipe which has 2 kinds of sugar in and on the biscuits. They are especially good with some honey drizzled over them! Think dessert biscuits instead of gravy sopping biscuits!

Sweet Potato Biscuits

2 cups all purpose flour
3 tablespoons baking powder
1/2 teaspoon baking soda
3/4 teaspoon salt
3 tablespoons brown sugar
1 teaspoon of ginger
1/4 teaspoon nutmeg
2 medium baked sweet potatoes, peeled and mashed
1/2 cup butter, melted
2/3 cup buttermilk
1/4 cup raw sugar

Preheat oven to 400 degrees.

Sift first 7 ingredients together. Mix potatoes and butter, add flour mixture and then the buttermilk. Don't overmix. Pat down dough to 1/2 inch on a floured board and cut with a floured cutter. Sprinkle tops with raw sugar. Bake on a greased cookie sheet for 20 minutes.

I am making chicken dumplings, no biscuits tonight.

I had some bananas that were nice and brown so I have 3 loaves of banana bread in the oven. The aroma in the house today is so homey. blink.gif
